So Summer is coming to an end, and you can really start to tell. Gone are the days of cloudless, sunny, hot days and here comes the rain and overcast skies. I have to admit though, I am not a die-hard fan of Summer, I think I will always be a Winter person. That being said, I have thoroughly enjoyed the hot days that have kept us company lately.
I woke up the other day to a nice overcast sky, with drizzles of rain hitting my window and the only thing I wanted was something to make it feel like Summer again. I thought back to what my Mum makes during the hot summers of home and in an instant it came to me, Mum’s Summer Couscous Salad. So easy. So quick. So tasty.
This salad would be the perfect accompaniment to a beach picnic, with the sounds of waves crashing around you. I wish I had thought of that before eating it all!

Summer Couscous Salad
Ingredients
225g Couscous
1tbsp Olive Oil
25g Butter, cubed
225ml Hot Chicken Stock
600g Cooked Chicken Breast, diced
½ Red Onion
½ Red Capsicum
½ Yellow Capsicum
½ Telegraph Cucumber
3 Spring Onions
100g Feta
Dressing
4tbsp Olive Oil
1tbsp Lemon Juice
Directions
- Place couscous, olive oil and butter in a large bowl and pour over hot chicken stock. Cover with cling-film or a plate and let sit for 10 minutes.
- While couscous is cooking, dice the cucumber, spring onion and red onion and slice the capsicum.
- Once couscous has cooked, add in vegetables and chicken. Transfer to a serving dish, crumble over feta and dress with olive oil and lemon dressing.
Dressing
- Whisk together olive oil and lemon juice until emulsified.
This looks like a delicious salad!
