Lolly Cake

Lolly Cake, a staple of any New Zealander’s 5th birthday party, well saying that, I still make it for my birthdays now and I’m 26 years old (ouch, it hurts to type that out… I finished high school 9 years ago…). Malt biscuits, melted butter, condensed milk, coconut and Eskimo lollies, seriously how could it not taste delicious.

It is here that we run into our first problem about moving to a country on the opposite side of the world, the UK does not have Eskimo lollies. Well you can get them here from the Kiwi shops, but I’m not dropping £3.80 for 170g of lollies, (roughly NZ$8). But alas, the UK does have foam bananas and foam lobsters/shrimp which are the same consistency as Eskimos and are near enough the equivalent.

The second problem we encounter is for the life of me, I could not find the malt biscuits that I wanted, so I grabbed some Malted Milk biscuits (thanks Sainsburys), and added in some dark brown sugar. A+ thinking there Jason.

Problems aside, the thing I love about Lolly Cake is that it is just so darn easy to make, throw everything together, shape it into a log, roll it in some coconut, chuck in it in the fridge for a couple of hours and boom.

Adaptions aside, this was about 99% spot on as to what I am used to making back in the motherland, so I am pretty stoked about that. As you can see, there are a lot more foam bananas than anything else, but that is purely because I got hungry while making it. Good news though, that lovely mother of mine is sending over some Eskimos (and Pineapple Lumps thank the lord) as we speak, so I can finally make some proper Lolly Cake. But until then, and because Eskimos are a luxury, here is my UK adapted Lolly Cake recipe.

Anglicised Lolly Cake


130g Unsalted Butter

250g Malted Milk Biscuits

3tbsp Dark Brown Sugar

1tsp Vanilla Essence

1/2 Can Sweetened Condensed Milk

100g Foam Lobsters/Shrimp

100g Foam Bananas

100g Desiccated Coconut

1/2 Cup Desiccated Coconut


  • In a pot, melt together butter and dark brown sugar until sugar has dissolved
  • In a food processor, or by hand, crush biscuits to a rough crumb.
  • Break the foam bananas/lobsters into pieces.
  • Add the butter, lollies, first measure of coconut, vanilla essence and condensed milk to the crushed biscuits. Combine and form into a log. Roll log in remaining coconut.
  • Wrap in cling-film and chill for 2-3 hours in the fridge.
  • Slice into desired size.
